Vegan Taquitos

Taquito’s, if you haven’t had one are a Mexican dish that are traditionally filled with some form of meat or cheese. They are amazing, fried and totally unhealthy, but one of my favourite junk food snacks. I had actually forgotten about them entirely until a month ago when I was in a 7/11 and saw them while waiting in line in their prepared food section. Of course they were not vegan so eating them was not a possibility, however the craving was there, sitting in the back of my mind at all times for the next few weeks. Finally I caved and set out to make my own at home, slightly more healthy and of course vegan.

Deciding what to use as my filling was difficult, traditionally the cheese ones are only cheese with this cream cheesy filling. I opted for re-fried beans as the main filling portion. It has the right consistency and a sort of creamy texture to it, plus re-fried beans are so easy to cook with. Of course I used vegan cheese, I used the Jalapeno mozzarella style cheese by daiya, if you can get your hands on this I highly recommend it, but any vegan cheese will work, you can even make your own.

The use of the oil is to ensure that the taquitos are thoroughly crispy- an important factor to me. If you want you do not need to use as much oil or any at all, the taquitos will still be delicious just not as crispy. Another option would be to pan fry them after baking them to get them crispy on all sides.

All of these toppings I used in the filling are optional, this is just one idea of how to make vegan taquitos, I personally really enjoy this combination however if you wanted to add or change anything feel free to do so. Some chopped cilantro would have been amazing in this, as well as tomato or peppers. If you are not a fan of re-fried beans you could use a cashew cream instead.

I made my cheese from my loaded fries post, which I will link below, but you can also make a taquito sauce, or use salsa as a dip, or nothing at all. I also have dipped these in my coconut sweet potato chickpea soup, which really complimented the flavours as well. There are so many options on how to prepare and serve these taquitos.
