High Protein Stuffed Sweet Potatoes
Stuffed sweet potatoes are a go- to meal for me, I will typically have them after working out later in the evening. Stuffed sweet potatoes are easy to prep and will keep in the fridge for 3-5 days (depending on the toppings). Sweet potatoes are considered a ‘super food’, they are extremely versatile, high in vitamin A and contains potassium, vitamin C and some Iron and Calcium. Vitamin A can help prevent sun damage, can help control hormonal acne and repairs cells. Sweet potatoes can help de-stress your body, and help the healing process after a muscle workout. Which is why I often incorporate sweet potatoes into my post-workout meals.
Featured in this stuffed sweet potato is black beans, roasted chickpeas, broccoli, tomato, corn, onion and an avocado sauce. Our sources of protein in this meal are the black beans and roasted chickpeas, healthy source of fat is the homemade guac. This meal is perfect for re-fueling after an intense workout but also for a maintainable healthy vegan lifestyle. I like to serve them on a bed of greens to get the extra nutrients in. The other amazing aspect of stuffed sweet potatoes is that you can put literally anything you want in them, any ingredients you have on hand will do.
Stuffed Sweet Potatoes
This recipe makes two sweet potatoes so adjust accordingly for the number you are making. If you do not want to wait 50 minutes for the sweet potato to cook you can put them in the microwave ( be sure to make many wholes around the potatoes with a fork first) for about 7-10 minutes. Then put them in the oven at 400 degrees Celsius once stuffed for the remaining ten minutes. This takes the cook time down to 20 minutes making it quicker for your busy days or just days where you are feeling lazy.
This Guacamole is very simple and is by no means a traditional guacamole, just a quick topping to whip up but it completes the meal. Again this recipe reflects the portion size for two stuffed sweet potatoes, adjust to make more or less potatoes.
