Nutrition Bowl with Cauliflower Rice

A nutrition bowl for me is just a bowl filled with as many nutrient dense foods as you can fit in one bowl. I put together a bowl similar to this one pretty much every day, it’s an easy way to get your greens in, while having an amazing meal. This bowl was inspired by cauliflower rice, and a strong craving for teriyaki stir fry take out.

I’ve been curious about cauliflower rice for a few years now, for some reason I pictured it being a lot more work than would be worth it, in reality this recipe was faster and just as easy as cooking rice. Lately I have been trying to substitute grains for something with a little more nutrition and a little less calories. So finally I caved and decided to try out cauliflower rice, and it was pretty damn good. Was it exactly like eating rice? Obviously not it’s cauliflower. Was it pretty damn close but also amazing in a whole other way? YES it was.  Cauliflower is high in vitamin C, it has Iron, protein and vitamin B-6, it is a hearty vegetable which means it will keep you full all while being low calorie, most importantly it takes roughly 8 minutes to throw together.

Once you have the two main components ready the rest of the toppings are up to you, in this bowl I included pan fried veggies; white mushrooms as well as enoki mushrooms, broccoli and Brussels sprouts with a touch of olive oil, salt and pepper. Topped the whole thing with fresh spinach, cherry tomatoes and avocado. Sprinkle on some toasted sesame seeds and you’re done.

This bowl made an amazing lunch, you will be amazed at how long the cauliflower rice keeps you full and satisfied, without leaving you feeling gross or overly full. It is quickly becoming a new staple in my diet. Let me know what you think about cauliflower rice, or what else you’ve used to replace regular rice/ noodles.
