Even with the warm weather one of my go to meals is still soup. Soup can be quick, cheap and most importantly very healthy. Whenever I am watching what I am eating I always meal prep a few soups because they are so easy to put together, and can be relatively low calorie. This soup is one of my favorites because the ingredients are very cheap but very filling, it leaves me fully satisfied which is ideal when you’re trying to lose weight. I chose to make this recipe as an oil free recipe, however feel free to add oil if you wish. I was keeping the fats and calories in the recipe to a minimum but this is a personal choice. Healthy fats are an essential part of any healthy diet, and necessary for our bodies to function properly. The ingredients include only one tsp of salt and pepper but add them to taste (this may be more or less depending on your taste buds). Additional ingredients not included in the recipe is avocado and nutritional yeast, which if you have seen any of my other recipes you will surely have noticed are two staples in my recipes. Nutritional yeast adds a cheesy flavor and is also very rich in many vitamins and minerals including vitamin B12, one of the hardest vitamins for vegans to get without taking a supplement. I have also served this with fresh cherry tomato’s on top which adds a nice summer vibe.
Potato and Lentil Soup
