Coconut Curry Thai Noodles

I woke up yesterday groggy and cold, not feeling the snow storm that was going on outside my window. So I decided to make some warm comfort food, for me that meant some noodles. This recipe is so simple I through it all together in under 30 minutes, it definitely put me in a better mood.

  • 2 Table Spoons Curry paste
  • 400 ml Coconut milk
  • 1 Tablespoon sesame oil
  • 1 teaspoon Curry powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 2 tablespoons Sriracha (Optional)
  • Tofu
  • Assortment of vegetables
    • I used broccoli, carrots and red pepper
  • Rice noodles

I start by chopping up my vegetables and tofu which I cubed, I used half of a brick but how much you want to use depends on your preferences. I then boiled water for the rice noodles and cooked those to the package instructions. I cut up about one cup of broccoli, half a red pepper and one large carrot. Next take out a large sauce pan, and start off with the curry paste, mix it around a bit, then after about a minute add your oil and tofu. After the tofu is cooked a little, add in the vegetables and toss them around until everything is equally coated in the curry paste, and the vegetables are getting softer, at this point add the coconut milk, and all the spices. Bring to a boil and let it simmer down for 5/10 minutes. Once the rice noodles are done, and your coconut vegetable mixture has simmered down a bit you can combine the two and mix it all together. IMG_2398

Bean sprouts would have been a great addition to this meal, mine had gone bad otherwise I would have added them on top when I plated them. This recipe was the perfect meal to get me out of my morning funk and energized me to face the snow.
