Today I was craving some unhealthy greasy loaded fries, and instead took the healthier route and cooked up some mostly healthy vegan loaded fries. So my boyfriend and I set out to the store, without a list which meant we went to four stores continuing to forget items. In the end it was very worth the hard work, just learn from my mistake and bring a list.
For the cheese sauce:
- 3/4 cup cashews
- 1 cup of water
- 1/2 cup of nutritional yeast
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon salt
- 2 table spoons vegan mayo (optional)
For the Toppings:
- Green onion
- vegan ground beef (I used Yyves Veggie cuisine)
If you haven’t pre-socked your cashews for at least three hours then the first thing you want to do is put them in boiling water for at least 20 minutes. The longer they are in their the softer they get, and the better consistency your cheese sauce will be. I used store bought frozen fries for simplicity, however feel free to make some of your own.
Once your cashews have been properly prepared put them in a blender along with the spices and nutritional yeast. Add about two tablespoons of water and start blending. Continue adding water and blending until the sauce reaches the consistency that you want. I quickly heated mine up in the microwave, you could also pour it into a pot and heat it up on the oven.
Cut up your toppings (I mashed my avocado into a plain simple guac, and cook your vegan beef according to package instructions (I pan fried mine with some white onion to add to the flavor) then plate it all up and share your creations with me!
