Best Healthy Vegan Mac n Cheese

The season of comfort food is among us, and I have been craving some mac n cheese for quite some time now, so this This recipe is one of the first vegan remake creations I have had that actually tasted like the real thing. I think it’s the potato’s that make this recipe taste so true to taste and texture.

I borrowed this recipe from Vegan yummyness, I made a few modifications, but for the most part I kept it the way it was. This recipe is very simple doesn’t require too many ingredients, and only takes about half an hour tops.

You will need:

  • 3 cups macaroni
  • 1 cup peeled/diced yellow potatoes – About two potatoes
  • ¼ cup peeled/diced carrots
  • ⅓ cup chopped onion
  • ¾ cup water (preferably use liquid from pot of boiled veggies)
  • ½ cup raw cashews
  • ⅓ cup coconut milk
  • ¼ cup nutritional yeast flakes
  • 1 tablespoon lemon juice
  • ¾ to 1 teaspoon salt (or more to taste)
  • ¼ teaspoon garlic powder
  • 1 pinch cayenne pepper (optional)
  • 1 pinch paprika
  • 1 teaspoon onion powder

You have two options with the cashews, either pre-soak them for at least a few hours, or quickly put them in boiling water for roughly 20 minutes, I opted for the second option.To start, boil two pots of water, one for the macaroni, and one for the veggies. Next I prepped my veggies, and got my blender set up. Once my water was boiling I added the veggies to one, and the Macaroni to the other. After your potatoes, onions and carrots are soft transfer them to a blender, saving 3/4 of a cup of the water, which you will also add to the blender. I also added all my spices, nutritional yeast, Coconut milk, lemon juice and Cashews. Blend that up, give it a taste and make any adjustments as needed.

When the macaroni is done, I drained the water and put it back in the pot, and Simpy poured the sauce over top, gave it a mix then transferred it into a presentable bowl. Another option would have been to have tossed some breadcrumbs on top, and put it in the oven on broil for a few minutes. I added a sprinkle of nutritional yeast on top as well. This recipe made four fairly big servings- you can only serve mac n cheese in large quantities.IMG_1959
